Smash Burgers

Ingredients
250g ground beef
1 brioche burger bun
Handful of sliced lettuce
3 sliced pickels
2 slices of tasty cheese (use American cheese if possible)
Oil to spray
Salt & Pepper to taste
Burger sauce
1 heaping tbsp mayonnaise
2 tsp sriracha
1 tsp whole grain mustard
Instructions:
Prepare the burger meat by shaping it into two balls. Pack them tightly. Prepare the burger sauce by mixing the listed ingredients until it reaches a cohesive consistency.
Heat a cast iron pan over medium-high heat. Once it starts to smoke, add a splash of olive oil.
Place the meat ball in the pan. Using a burger press, the back of a saucepan, or a flat spatula, smash the burger patty as flat as possible.
Season with salt and pepper.
Let the patty cook until juices start to rise to the surface—about 3 minutes.
Flip the patty, add a slice of cheese, and cook for another 2 minutes.
Meanwhile, toast the separated burger buns on a flat pan until golden brown.
Spread sauce on both sides of the bun, then assemble with lettuce, burger patties, and pickles.
