Coconut Basa Curry
Cook time: 30 minutes
Yield: 2-3 servings
Ingredients
400g basa fish fillets portioned to two inch pieces
salt & pepper to taste
1/2 tsp turmeric
1 sprig curry leaves
1 pandan leaf
1 tsp chili powder
1.5 tsp curry powder
1/3 tsp turmeric
1/2 cup water
1/2 inch cinnamon quill
1 tsp tamarind extract
150ml thick coconut milk
2 green chili whole
Curry paste
3 cloves garlic
1 large red onion
3 coriander roots
1 inch knob of ginger
1 sprig curry leaves
Pinch of salt
2 tbsp coconut oil
Whole Spices:
1 tsp mustard seeds
2-inch stick of cinnamon
1/2 tsp fenugreek seeds
1 tsp fennel seeds
3 dried black stone flovers
Instructions:
1. Season the portioned fish with salt, pepper and turmeric.
2. Using a food processor or a motar & pestle make the curry paste with the ingredients listed. Ensure everything is finely ground and chopped.
3. Heat up coconut oil on a pan on medium heat, once heated add the whole spices. Give it few seconds to infuse with the oil.
4. Add pandan leaves, curry leaves and the ground curry paste. Mix and cook down for 5 minutes.
5. Add chili powder, curry powder & turmeric. Mix and add water.
5. Add cinnamon and tamarind extract. Cook for 5 minutes.
6. Add coconut milk, stir and cook till the coconut milk starts to simmer.
7. Add the fish. Cook while carefully stirring for 10-12 minutes.
8. Finish with a dash of lime and serve with rice.
