Pork Adobo

Ingredients

  • 750g pork belly portioned to two inch cubes

  • 1.5 tbsp crushed black pepper

  • 12 garlic cloves roughly chopped

  • 150ml soy sauce

  • 50ml rice vinegar

  • 1.5 tbsp sugar

  • 50ml dark soy sauce

  • 3 tbsp neutral oil

  • 1/2 spring onion thinly sliced for garnish

Instructions:

  1. Heat up a cast iron pot or a heavy-bottomed pot on medium-high heat.

  2. Once heated, add the oil, and place the pork skin side down. Let the skin brown up for 3–4 minutes.

  3. Turn the pork pieces to cook them evenly for 2 more minutes.

  4. Now add the garlic, mix well to let the garlic start cooking.

  5. After 3 minutes, add the rest of the ingredients.

  6. Occasionally mix and cook covered with the lid for 30–35 minutes.

  7. Serve with freshly steamed jasmine rice & garnish with spring onions.
