Sri Lankan style baked pomfret
Ingredients
Paste
5 garlic cloved
1 inch knob ginger
3 small thai green chillie
1 tbsp black pepper powder
1.5 tbsp chili powder
1 tsp turmeric
1 lime juiced
3 tbsp oil
1.5 tsp salt
Plating
1 large golden pomfret
1 bunch cos lettuce
1 large red onion sliced rings
1 lime sliced
Instructions
Crush the ingredients for the spice paste using a mortar and pestle until you get a coarse paste.
Clean the pomfret thoroughly; remove the fins and gills.
Make incisions on both sides of the fish to help the marinade penetrate.
Apply the spice paste evenly all over the fish, including inside the cavity and cuts.
Cover the fish with cling wrap and let it marinate at room temperature for at least 30 minutes.
Preheat the oven to 180°C (350°F).
Line a baking tray with baking paper and place the marinated fish on it.
Bake in the center of the oven for 20–25 minutes, adjusting time based on the size of the fish.
Arrange lettuce, sliced onions, and lime wedges on a serving plate.
Place the baked fish on top and garnish with parsley.
