Whole Fish Curry

Ingredients

Yield: 2-3 servings
Cook time: 30 minutes

1 golden pomfret, portioned
3 tbsp coconut oil
1 tsp mustard seeds
1 small red onion, chopped
1 sprig curry leaves
3 garlic cloves, chopped
1/4 inch knob ginger, chopped
1/3 tbsp curry powder
1/4 tbsp black pepper
1/4 tsp turmeric
1/2 tbsp roasted chili powder
2 cups water
1 tsp garcinia paste
2 green chilies

Instructions:

1. Portion the fish.
2. Heat coconut oil on medium-low heat.
3. Add mustard seeds. When they start to pop, add the onions.
4. Let the onions turn color, and after 3 minutes, add the curry leaves.
5. After another 3 minutes, add the garlic and ginger. Sauté for another 5 minutes.
6. Add all the powdered spices, mix, and then add the fish portions.
7. After 1 minute, add water, roasted chili powder, garcinia, and salt.
8. Add green chilies and adjust the salt.
9. Serve after 10 minutes. Ensure the oil has separated.
