Sri Lankan Coconut Sambol

Ingredients

1 cup rehydrated desiccated coconut or freshly grated
1/2 tbsp Maldive fish flakes
1/2 tbsp chili flakes
1/2 sprig curry leaves
1/2 tsp salt, or to taste
2 garlic cloves
1/2 red onion, chopped
Juice of 1 lime

Instructions:

  1. Grind the Maldive fish flakes, salt, chili flakes, and curry leaves for a minute until the mixture is still coarse.
    Add the garlic and onions, pound and grind well, but don’t let them disintegrate; allow them to retain some texture.

  2. Add the coconut and pound well for a minute, ensuring the coconut mixes thoroughly with the rest of the ingredients.

  3. Just before serving, squeeze in the lime juice, mix, and serve.
