Chicken Chow Mein

Ingredients

Cook time: 30 mins

Yield: 2 pax

Chicken Velvet

1 large chicken breast fillet, thinly sliced with the grain
1.5 tbsp soy sauce
2 tsp corn flour
1/2 tbsp white pepper
1.5 tbsp water

Stir Fry

140g dried egg noodles, steamed until halfway cooked, then briefly boiled and run through cold water
1/2 regular brown onion, thinly sliced
1/2 large carrot, julienned
40g Napa cabbage, thinly sliced
2 spring onions, sliced
Peanut oil
A handful of bean sprouts
2 tbsp sesame oil

Instructions:

  1. Velvet the chicken with the velvet ingredients for a minimum of 15 minutes.

  2. Heat the wok over medium-high heat. When smoking, add oil and fry the chicken until 90% cooked through. Remove and set aside.

  3. Add more oil and heat on high. Add the onions, carrots, and cabbage, and stir-fry for 45 seconds. Set aside.

  4. Add more oil if needed, and on medium-high heat, add the noodles. Let them slightly brown at the bottom.

  5. Add the cooked chicken, vegetables, sauce, and bean sprouts.

  6. Toss everything well for 1–1.5 minutes on high heat until the noodles are cooked through and the sauce is well absorbed.

  7. At the last moment, add the sesame oil and spring onions, and give a final toss.
    Serve and garnish with spring onion greens.
